Hey everyone,
I'm new to this forum, so I though I'd introduce myself with one of my all time favorite skirt steak marinades.
Per 4 lbs of Inside Skirt Steak. (with fat trimmed off)
1 cup olive oil
Little more than 1/2 cup soy sauce
1/2 cup lime juice
8 scallions. (Cut off the roots)
5 tablespoons brown sugar
Garlic to taste. (but don't go shy with it, It really brings out the taste of the scallions)
Cayenne Pepper to taste (Dont be afraid to give it a little kick)
2 Pinchs cumin
Combine everything in a blender, blend, then marinate skirt steak for 18-26 hours.
Notes:
DONT add salt, the soy sauce adds enough saltiness to the flavor.
Grill the Medium-Rare, or if you're like me then Rare
