Pork Tenderloin, Stuffed Mushrooms and Carrots

Marinated pork tenderloin in olive oil, cider vinegar, garlic, rosemary, salt and pepper. Portobellos stuffed with a store bought spinach casserole with grated fontina on top. Carrots from the Weber recipe of the Week from a while back.

Pretty good. The tenderloin was great. I hate carrots but Leigh-Ann and Campbell like then. Thought I'd try this recipe. It was pretty good but carrots still aren't my favorite. The mushrooms were extremely overcooked. They took less time to get done than I had expected and the tenderloin took more time so my timing was off. Still good though.

Great look'n plate, Don! I love cooked carrots and those look and sound great. I think mushrooms are good no matter what, undercooked or over cooked they are still great, imho.

I just bought some pork tenderloin for the grill for tonight's dinner ! Hope my turns out as nice as yours...
