My navy bean and ham soup.
1 lb of navy beans or any other beans. I like to use navy because they are higher in fiber.
6 cups of water. More or less depending on your lid or thickness liking
2 carrot stalks (sliced)
2 celery stalks (sliced)
1 whole onion. (chopped)
3 chicken bollion cubes (optional) or 1 tsp of salt ( taste with liking)
1/2 lb of Low fat or fat free ham- optional.
Either let these beans soak overnight or prepare to cook them or at least 6-8 hours. Boil for an hour, let set an hour, then cook for 3-4 more hours.
Serve with whole wheat bread. Very low glycemic and good.
