Hi, anybody got any idea what the edge angle on these might be? Since the are advertised being for global knives, I am guessing that it would be around 15. I hope to us it on a double bevel Japanese Gyuto Chef. Been using crappy knives with 22 degree angle so I am looking foreword to using this new knife. Just don't want to mess it up the 1st time I go to sharpen it. Don't really want to do the whole wet stone thing yet.
