onion powder
garlic powder and garlic cloves
lemon
softened butter
freshly-cracked black pepper
salt
ground sage
ground oregano
slice lemon thinly. smash garlic cloves and remove peel; chop very roughly. stuff slices of lemon and pcs. of garlic into cavity alternately. (it takes a little work, because the cavity is really small.)
heavily coat the hen with butter. season with the remaining ingredients; might i suggest going heavy on the sage and garlic?
place in small roaster.
bake in preheated 400-degree oven for about an hour and 15, basting often till the skin is nice and crisp. don't baste TOO soon after it goes into the oven, or you'll lose all of your seasonings.
you can sub out other seasonings; this has just become my favorite blend.
