Eggnog Cookies

For the Cookies:
1 C Butter, softened
200 Gr Sugar (1 C)
1 Lg Egg
1 C Eggnog
422 Gr AP Flour (3¼ C)
1 tsp Baking Powder
1 tsp Baking Soda
½ tsp Salt
½ tsp Nutmeg

For the Icing:
1½ C Confectioners Sugar
3 Tb Eggnog
¼ tsp Nutmeg

Makes about 50 cookies.

Preheat the oven to 350°F.

Grease cookie sheets or use parchment paper.

Cream together the butter and sugar until smooth.

Stir in the egg and eggnog.

Separately combine the remaining cookie ingredients and stir them into the egg and sugar mixture.

Drop rounded spoonfuls onto a cookie sheet. Bake 10-12 minutes until golden.

Combine the icing ingredients in a small bowl, adding the eggnog a tablespoon at a time until the desired consistency is achieved.

Spread onto the cooled cookies and decorate with sprinkles or colored sugar.

1½ tsp Baking Powder
1½ tsp Baking Soda
¾ tsp Salt
¾ tsp Nutmeg

For the Icing:
2¼ C Confectioners Sugar
4½ Tb Eggnog
⅜ tsp Nutmeg

Makes about 75 cookies.
 
Thank You! I know how to make egg nog ... I don't know how to cut the recipe down to make less. I'm going to use a commercial egg nog. It comes in a quart size and many flavors to choose. I see nutmeg in the recipe ... maybe I should use one with nutmeg.
