SORRY ABOUT THE "BUFFALO CHICKEN PIZZA" TITLE!!! I'm still new at this and forgot to update it from my previous video.
Fuzzy's Steak and Chicken Fajitas
The following recipe is a quick and easy way to do a large batch of fajita ingredients on a Big Green Egg.
Your comments, questions, and concerns are welcome...and I'd appreciate it if you would share your experience or tweaks to this recipe.
Ingredients:
Flour Tortillas (low fat)
Skirt Steak
Chicken Tenderloins
Chulula Hot Sauce
Dales Low Sodium Marinade
Lime Juice
Fresh Cilantro
Montreal Steak Seasoning
Olive Oil
Salt
Pepper
Bell Peppers
Sweet Onions
Pairs With (Pick 1 or 2):
Shredded Cheese
Salsa
Chulula
Sour Cream
Method Of Cooking:
Big Green Egg (other smoker, grill, or even oven will work) with 4 loaf pans on the grate (on top of the fire ring). Medium amount of Natural Lump Charcoal at 315-400 degrees for about 15-25 minutes.
Total Cook/Prep Time: About 1 hour (or 2 episodes of your favorite reality program)
Feeds: 2 lumberjacks, 4-5 hipsters, 1 family, or a party of guests if you triple the meat (the loaf pans have room for it)
