Lunch today was soooo good..I not only got fed, but got the recipe
4-unsliced sourdough rolls
1/4c. evoo
3-tab. minced garlic
1-c. roasted red peppers, sliced
1-1.4-c, pepper jack cheese, grated or thinly sliced
1-avocado that is slightly firm, sliced in long slices
Make 4 crosswise slices in the rolls, don't cut through. Brush the inside with plenty of evoo, now put in some of the minced garlic, top with the roasted peppers and then stuff the cheese into the slits with the peppers and garllic. Put in 400 oven for about 12-15 min or til cheese melts, remove from oven and stuff a slcie of avocado onto the cheese..Serve right away..
serves 4..Nice with crisp cool green salad and lemonade or tea.
