Sabroso Pollo - Tasty Chicken 9-3-12

Fired up the BBQ for some chicken Labor Day (Hope everyone had a good one). Also made some of our favorite potatoes, which are sliced almost all the way through and stuffed with onion and bacon and then covered in cheese. Not exactly heart healthy but I was not cooking for Doctors.

Indirect with a handful of hickory chips.

Plated with slaw, spiced watermelon and the potato. A tasty treat for sure.

That looked excellent! Do you foil the potatoes or straight on to the grill?

In order to cook the potatoes through I leave the cheese off and give them a good 45 minutes covered in foil. Once soft I open them up and put the cheese on and take them off as soon as the cheese melts. If you can fan them out really far without breaking them they look a little like lobster tails

Here is a better picture from some we made back in the summer so you can see how they are cut. These may be a bit cooked but still one of my favorite ways to cook a potato.
