I cooked a turkey yesterday just because and seasoned with some Weber s Kickin Chicken. I could of swore I took a few finished pics but I guess not. Here is one when I put it on the smoker.

I deboned the turkey and made some enchiladas and rolled tacos today.

Enchiladas using some turkey, canned enchilada sauce, onion, shredded cheese, corn tortillas and place in a casserole dish.

Made a homemade salsa verde and mixed it with some turkey, shredded cheese, green onion then rolled it in a corn tortilla.

My plate. Some refried beans and made a topping sauce with some of the salsa verde, sour cream, a couple of avocados and a few spices. The plan was to make enough stuff for dinner today and tomorrow, but we had a few surprise visits this evening and all that is left is a few scraps for lunch tomorrow.

Looking mighty good. All thats missing seems to be a cute little Senorita to serve it up.
 
All this Tex Mex stuff got me reminiscing of Rosarita who worked Papa Guyo's place down in Nuevo Laredo. Dang..she was a good cook I bet. She was fixing to get married and move to San Antone in two weeks. I bet she made somebody a great wife.
