Herbed Celery and Apple Sauté

Very simple.

Herbed Celery and Apple Saute
3 c Celery, sliced
3 c Sweet yellow onion, chopped
2 Granny Smith apples, chopped
1 can Water chestnuts, rough chopped
4 tb Parsley, fresh, chopped
2 tb Rosemary, fresh, chopped
Salt and fresh pepper to taste
2 ts Poultry seasoning
1/2-1 c Chicken broth
1/2 c Dried fruit, chopped (apricots, prunes, cherries, cranberries, raisins)

1.Saute celery, onion, apple and water chestnuts in a large skillet until they begin to soften. Add herbs and seasonings.
2.Add a 1/2 c of broth to the vegetable mixture and continue to cook until veggies and soft, but still sl. crisp.
3.Stir in dried fruit and allow to stand for several minutes before serving to allow the fruit to soften slightly but maintain its texture. Serve warm.
