2Tbsp. butter or margarine
2Tbsp. celery, finely chopped
2Tbsp. carrot, grated
1Tbsp. onion, finely chopped
1/2tsp. salt
dash pepper
3Tbsp. cornstarch
2C. cold milk
2C. grated cheese of your choice(I've made this with cheddar & mozzarella & both were very good)
Sauté celery, carrot, & onion in butter until tender; add salt & pepper. Stir cornstarch into cold milk until well blended; stir slowly & constantly into vegetables. Heat until thickened & bubbly. Add cheese & stir until melted. Serve with croutons.
