Corn In The Crapper Chili

My bride and I headed to Mackinaw City MI, for the 20th annual Winterfest, and the main event, the "Outhouse Races." There was a chili cook off as part of the festivities and I tasted a great chili, the maker was willing to share the recipe. The Outhouse race involved a modified outhouse and five people, 2 pushers, 2 pullers and one person sitting on the seat. One of the teams also competed in the chili cook off, hence the name of the chili. So here is the recipe, a few outhouse pictures and a few shots of the finished product.

Corn In The Crapper Chili - Recipe By: Captain Fred, Team Corn

1 stalk celery, diced
1 large onion, chopped
1 1/2 pounds ground beef, lean
4 ounces mushrooms, raw, sliced
2 cans Itamian recipe stewed tomatoes, 14.5 oz.
Uncle Ben's Original Rice Mix, 1/3 rice uncooked, whole spice mix
12 ounces chili sauce
16 ounces salsa, mild
4 strips bacon, cooked, cooked
16 ounces kidney beans, dark red, drained but not rinsed
15 ounces southwestern spiced black beans, including juice
12 oz. Bushes Baked Beans, including juice
4 ounces whole kernel corn, canned, driained not rinsed
5 shakes Tabasco Sauce
5 shakes Worcestershire Sauce

Saute' celery and onions until caramelized. Add ground beef and cook thoroughly. Drain most of the fat off. Combine the rest of the ingredients into a large pot or crock pot. Cook on low 4 hours. Stir as desired.

A little confused on the rice and mushrooms but it sounds like that might just warm you guys up. Gonna' be COLD up thataway!

Tried to keep it short for Nick ;) BTW the rice is the UB Long Grain Wild with the spice packet in the box, use 1/3 of the rice (not sure why I couldn't have used it all) and the full spice packet. The mushrooms are just plane old mushrooms sliced.
 
Hmmmm..got to taste better than it might appear to the nekked eye. I will get my yankee pal from Iowa to test it out. Thanks.
 
Looks good, might use this for our next chili contest at work.
