    Apple Wood Chips

I finally cut down the apple tree in the back yard. It had died because I pruned it too aggressively a couple of years back. I ground it up with my chipper. I guess I will now be experimenting with apple smoke this season. :D

Here Ya Go - For You Woodburners

I have been burning Red Oak for years, and I had one White Oak tree I cut down a few years ago. I was amazed at the difference. It made the Red Oak seem almost like Pine by comparison.

    Deep Fried Macaroni and Cheese

This is the LINK to the Butter Fried Krispy Kremes that I tried at the beach last summer. I had a dozen stale KKs and I fried em up and the folks at the beach house went wild over them.

    Cool Tip

IMHO: Slow cooking does not lend itself to the instant gratification generation. Grilling steaks is a young mans game, slow cooking butts and brisket takes patience and experience. :)

    My New Braunfels Hondo

 Yes I know. That firebox has had some fire in it from time to time. I am going to sandblast that fire box and repaint it before I move it. It is fixin to go over to my son-in-law's house soon. I plan to teach him how to cook with it and the tradition will continue.

    My New Braunfels Hondo

ED NOTE: I found a digital camera at the pawn shop today, and I couldn't help but taken it home a play around with it. This was my first real smoker before I got my BGE. It is a New Braunfels Hondo. I have cooked many fine butts, ribs, chickens and turkeys. I finally got it where I...

    I'M IN TROUBLE

Yes indeed water and wind will draw the heat out of the metal sides of the smoker. Just hold your hand near an old style single pane window on a cold day to feel an example of how much heat is drawn out through the metal sides. Think of the Q as a little old man sitting in a one room cabin. He...

    Lotta Bull

Melody brought home this tonight. It was a handout from one of the competition seminars. Any of you guys ever use this stuff? I am going to try it, but to be honest I don't grill a lot of steaks. I guess I might have to get a couple and try it out.

Making Charcoal, Updated with video and pictures

I have been making small quantities in my wood stove on these cold nights. I usually get the stove going really good, and then at bedtime I shut the air off completely. The next afternoon it has lump in it ready to go. I must warn though, be careful of smoldering embers in the lump that can...

    Ribs day 2

I thought you said you weren't going to make any cornbread. I make mine the same way, by putting my old LODGE iron pan in the oven to preheat after I have greased it up real good. It is the only thing I use that pan for. I do like my cornbread a little sweet though. Looks good ! :D

    JB makes BBQ beef ribs

Once again JB you have started me to dreaming. I had thoughts of converting that old Hondo into a gas smoker years ago. I might just do it. My BGE does a really great job with everything I smoke, but it is small and only can do two racks of ribs at a time. My Hondo could cook enough for a crowd...
