Tijuana Flats Shredded Chicken Recipe

I have been searching for the Tijuana Flats shredded chicken recipe EVERYWHERE with no luck at all, does anybody have any insight or can point me in the right direction?

I had abdominal surgery and have food sensitivities to basically everything except plain jasmine rice and chicken so I need more options lol

If anybody knows a current or ex Tijuana flats chef, I would happily pay them to have a quick conversation about how I would be able to replicate this recipe
