Deep, heavy skillet
2 tsp. vegetable oil
1 cup of chopped onions
3 cloves garlic, minced
2 lb. lean ground beef
1 28-oz. can of tomatoes in puree, coarsely chopped
½ tsp. ground coriander
1/8 tsp. ground cloves
1/8 tsp. ground allspice
2 tsp. oregano
2 tbsp. brown sugar
2 tbsp. mild chili powder
2 tbsp. ground cumin
2 cups cooked kidney beans
1 cup chopped green pepper
1 finely-chopped jalapeno pepper, or more, to taste
Heat 2 tsp. oil in a deep skillet. Sauté the chopped onion and garlic until they are soft.
Add the ground beef. Break up the pieces and brown them. Drain off the fat.
Add the tomatoes in puree and the coriander, cloves, allspice, oregano, brown sugar, chili powder and cumin. Stir and heat the mixture until it bubbles. Reduce the heat, cover the skillet and simmer for 30 minutes. Add the cooked kidney beans and chopped jalapeno and green peppers. Cover the skillet and simmer the chili for 20 minutes more.
