We had the other half of the tourtière I made Saturday and the leftover gravy. I made a salad of rainbow chard, romaine lettuce, red onion, napa cabbage, carrot, corn kernels, peas, and sunroot, dressed with the last of my batch vinaigrette. I served fingerling potatoes with it.

I’m glad to see that you use parsnips.

Parsnips have become a neglected/forgotten vegetable.

When I was a kid we used to cut them into coins, cook them until tender, and then fry them like cottage fried potatoes.

Honestly, if it was just me, I wouldn't but Craig loves them. They're okay but not something I'd go out of my way for. I'll have to tell him about your method, maybe I'll like them more that way.
 
Sundyay/Monday was one dinner, Wednes/Thurs another, so I had to think of something small and quickly. It was turkey salad! I baked some bok choy and there was a big salad too.
