Pretty much a non-recipe, but worth sharing. =) The background heat of the chipotle is perfect against the natural sweetness of the potatoes.
* bake sweet potatoes, when cool enough to handle remove the skins
* butter, about 1 T per cup of mashed potatoes

* chipotle peppers in adobo, to taste
