[FONT=&quot]1-15 oz. can Pineapple Chunks[/FONT]
[FONT=&quot]½ c. ketchup[/FONT]
[FONT=&quot]2 TBL Cornstarch[/FONT]
[FONT=&quot]2 TBL Brown Sugar[/FONT]
[FONT=&quot]3 TBL Cider Vinegar[/FONT]
[FONT=&quot]2 TBL low Sodium Soy Sauce[/FONT]
[FONT=&quot]1 Medium Bell Pepper, Green[/FONT]
[FONT=&quot]½ Medium Bell Pepper, Red[/FONT]
[FONT=&quot] [/FONT]
[FONT=&quot]Drain the Pineapple, reserving the liquid; set aside[/FONT]
[FONT=&quot]Rough-chop the peppers; set aside[/FONT]
[FONT=&quot] [/FONT]
[FONT=&quot]In a 1-qt. Saucepan, combine the brown sugar and cornstarch; mix thoroughly, making sure that the cornstarch is thoroughly dispersed.[/FONT]
[FONT=&quot]Add enough water to the reserved pineapple juice to measure ½ cup: Stir this into the sugar mixture.[/FONT]
[FONT=&quot]Stir in the ketchup, vinegar and soy sauce.[/FONT]
[FONT=&quot] [/FONT]
[FONT=&quot]Heat to boiling over medium heat, stirring constantly.[/FONT]
[FONT=&quot]Boil for 1 minute, still stirring constantly.[/FONT]
[FONT=&quot]Add the pineapple chunks.[/FONT]
[FONT=&quot]Add the peppers, lower heat to a simmer and cook long enough to[/FONT]
[FONT=&quot]bring the peppers to the crisp/tender stage…. [/FONT]

[FONT=&quot]Use this sauce with stir-fried chicken, pork or shrimp, and whatever stir-fried vegetables you choose.[/FONT]
