Nothing fancy, just easy comfort: scrambled eggs with ham and sharp Cheddar, paprika potato cubes,and rye toast

I had fish sticks and fries. DD had glazed salmon.

Yesterday, Frank ground some chuck roast to make chili, and I squeezed a few lemons to make lemon cake. He makes his chili without beans or macaroni, so I add both to mine. We both like cheese and onion. He adds sour cream to his.

I wish to note that the cake was delicious straight from the pan. ?

We had leftovers tonight.

We ordered out. DH had a pizza and I had a chicken sandwich. I really like the way this resto makes their crunchy chicken sandwich on a bun.

A new brand of Italian sausage done in a one pan meal with carrots and potatoes. Some l/o brussels.

We had a big lunch, so not too hungry for dinner. I made a batch of 1000 Island Dressing and we had a big salad topped with shrimp. And garlic cheese toast. Yum.

Went with the TNT dinner. Beef enchiladas, re fries with rice and chips.Now what to do with the left over salsa.

How much leftover salsa @Chef Munky? You can sear a couple of boneless skinless chicken breasts, simmer them in the salsa, then top with grated cheese and pop under a broiler.

Not sure. The container is about the size of a Big gulp.
It's extremely hot.

I had to Google "Big Gulp" since I never buy them. 30 ounces should be plenty for four Dolly Parton chicken breasts. Saute plenty of onions/bell peppers/mushrooms (any or all of these), smother everything with plenty of mild cheese (think Monterey jack or Colby), and serve along side plenty of creamy mashed potatoes.

Or just pitch the salsa. That's the easier choice.
