Ms. Mofet's Garlic Parmesan Knots

Bread machine - 1 lb. dough:

1/2 C. + 3 TBSP. Water (80 °F - 105 °F)
1 TBSP. Butter
2 C. Flour + 3 TBSP.
(2 TBSP. Wheat Germ - Optional)
1 TBSP. Sugar
1 tsp. Salt
1 tsp. Active Dry Yeast

Place into bread machine pan in this order:
Water and butter
Flour and wheat germ, spread evenly over water
Sprinkle sugar over flour
Salt in one corner
Make shallow well away from salt and add the yeast

Select dough cycle.

Garlic Parmesan Topping:

5 TBSP. Butter
1 - 1/2 TBSP. Fresh garlic, minced - or To Taste
1 - 1/2 TBSP. Fresh parsley, chopped fine - or To Taste
Salt - To Taste
Ground peppercorns - To Taste
Fresh grated Parmigiano Reggiano & Pecorino Romano cheeses

Preheat oven to 400 °F.


Melt butter then add garlic, parsley, salt & pepper; set aside.

When dough cycle is finished:
Sprinkle work surface lightly with flour and turn out dough.
Cut dough into equal parts.
Roll each piece into a rope and tie into knots.
Cover lightly and allow to rest for 30 min.
Brush knots with half the butter mixture.
Bake at 400 °F, 18 - 20 min. or until golden brown.
Remove from oven and brush with remaining butter mixture and sprinkle with grated cheese.

never done Bread Machine dough before, don't have a machine

Just make dough the way you usually do. Then let it proof/rise the first time. Then just continue with directions from there.
 
Msmofet, how many knots do you usually make with that amount of dough?
It depends on how much dough I have.

I usually make knots out of extra dough after I make something else.
This time I made 2.5 lb. of dough. I made a loaf of bread and then used the excess for these knots. Probably about 1/2 lb of dough. I got 8 nice sized knots. I wrote the recipe for 1 lb. of dough. You can probably get 16 knots. But it also depends on the size of the knots.
