Looking for new panini combinations

Im in the mood for panini this week. Just curious if anyone has any suggestions. Usually I use provolone, spinach with garlic/oil, portabellas, grilled veggies. Im just looking for a new combo or twist .
 
~Roast Turkey Panini
For this turkey panini, one slice of ciabatta is spread with seasoned cream cheese, the other, with cranberry sauce; sliced roast turkey and onion are layered in between.
 
~Smoked chicken and sun-dried tomato sandwiches with basil olive pesto
3 ounces dried tomatoes (about 3/4 cup), not packed in oil
a long loaf (about 20 inches) French or Italian bread
about 1/2 cup basil olive pesto
6 to 8 ounces smoked chicken breast, sliced thin
1/2 bunch arugula(or spinach), trimmed, washed well, and spun dry (about 1 cup)
 
You're vegetarian , right?

Whole-wheat pita pocket, vegetarian refried beans, sliced roasted red pepper, sliced olives, mild salsa, sliced cheddar cheese. Mexican flavor :)
 
Can't you use anything you'd use on a regular sandwich?

Swiss cheese, onions, tomatoes and mushrooms, brush bread with olive oil or butter
add some bacon for an add treat!

Yes im vegetarian, but even the meat ideas still give me an idea of flavor combos.
IM Just looking for different angles on the panini, so i dont get bored with what i usually do .
