Hi the meal was good but i am not a total fan of shank be it veal or lamb i was wondering if one could do this with Veal chops . ?

Also i need a vegetable grinder does anyone know of any good ones.
 
Hi, Nick. Sorry the meal did not meet your expectations. You could make the dish with any veal cut. I'd stick with a cut suitable for braising rather than a premium cut.
 
I loved the sauce its just i find shank of any meat a bit fatty and tasteless. But thank you for your help the sauce as i said was yummy.
 
Nick, consider giving it a try with another cut of meat. It can be boneless stew meat in veal, lamb or beef. The sauce will go well with any of them.

This was a nice meal, Andy. I did cook it a bit more rare than I usually do and I liked it better. Thanks.:bounce:
 
Veal Woes

Osso Bucco is a flavorful cut but it does contain grizzle around the outside and the bone in the middle

this used to be a real "left over" peasant cut

but once creative chefs starting to exploit it, the prices went up

you can stew any cut but I wouldnt recommend veal loin chops

find a cut with some collagen (which is flavorful and moist when slow cooked)

a cut from the leg, round or shoulder
