ISO Cake-like cookie

Anyone know how to make that cake-like, cookie that stays soft even when frozen, that is used for ice cream sandwiches? I've had the ice cream sandwiches with the very firm, dare I say, mildly crispy cookie. But I like the tender ones better. The texture I like is almost like a good brownie, but not as chewy.

Not certain if this is what you mean but, any cake recipe can be converted to making cookies. Of course, cake mix, eggs and oil recipes have been used for ever. No reason you can't do this with your, from scratch, cake recipe.
