ISO an alternative for veal in a lasagne recipe

Veal is difficult and close to impossible to find veal in my area, so I usually substitute chicken. If I'm preparing veal scallopini, I will use thinly sliced chicken breast cutlets and pound them to replicate veal.

Since veal is a relatively mild meat, white meat chicken or pork could be substituted.
 
Are you opposed to beef or just the veal? Ground beef would be the closest alternative. After that, I'd use pork. Poultry would always be my last choice because it tastes so much like poultry...
