Any meat you enjoy would work. We enjoy pork as well as chicken.

Veal is difficult and close to impossible to find veal in my area, so I usually substitute chicken. If I'm preparing veal scallopini, I will use thinly sliced chicken breast cutlets and pound them to replicate veal.

Since veal is a relatively mild meat, white meat chicken or pork could be substituted.

Are you opposed to beef or just the veal? Ground beef would be the closest alternative. After that, I'd use pork. Poultry would always be my last choice because it tastes so much like poultry...

For lasagna and generally bolognese sauce, I use half beef and half pork.

this would be my choice. and not just cuz geebs is my buddy. usually prefer It. sausage in dishes like these.

Just did a little research in the specified recipe, Lasagne Bolognese, and came up with this from one of Emeril Lagasse's sites: Lasagne Bolognese. He uses ham and pork. Just something to throw out as an idea.
