Okay gang, this is my third attempt at cooking in the Instant Pot® ...

Baked Potato!
Our stores have LARGE `taters, so I went with this technique:

Steamer basket in liner pot
add 1 c. water
set to Pressure Cook/Manual for 20 minutes
NPR for 10 minutes
QR
Serve

Hmmm ... not cooked evenly. Got some kinda nice cooked bits and other parts on the extreme al dente side :wacko:
That's okay, I had cut the Potato in half before serving and will use that for Potato O'Brien in morning for breakfast :chef:

I think I'll stick with the oven for BAKED Potatoes in the future.

That's something I've never tried...now I'm glad I didn't.

I think I'd use the IP to make something to serve with the roasted potatoes. Just like MW potatoes, it doesn't seem like the skin will be right, even if it is cooked evenly, but maybe I'm wrong.
 
Had the same trouble and am still experimenting. I peal mine, now, and cut into three or four pieces and it has been the answer to baked potatoes for me. 20 minutes is what I found works but 25 with skins maybe better. (I didn't like soggy skins, BTW.)
I QR after 5 minutes and my taters are almost perfect. :chef:
I believe I'll go to 22 minutes for softer taters next time... :yum:

I just baked another potato in my mini IP. I peeled it, rinsed it, cut it into 4 pieces, put it in its own bowl and steamed it on high for 22 minutes. PERFECT! I then mashed it and covered it with a little salt and lots of butter. Mmmmmmmmmmm good! :chef:
