These were inspired by Moon Pies, but are so very good. The filling between the outer layers is smoother than any store=bought icing you will ever taste.

Ingredients:
2 cups powdered sugar
2 eight-ounce pkgs. cream cheese
red abd yellow food coloring
1/4 tsp. salt

Combine all ingredients in a suitable bowl with an electric egg beater. This icing is silky smooth. It can be stiffened by adding more cream cheese and o\powdered sugar, or thinned with more water.

For the outer cookie/cake, I used a from scratch recipe for pumpkin bread that came out very moils, and with great flavor.

The cake batter was poured into pumpkin shaped muffin tins, just until the face was fully covered. I then baked them, and when cooked place the orange cream cheese frosting. Needless to say, they were delicious.
