There ae cooking techniques that will reduce sodium, potassium, and phosphorous levels in certain foods, making them available to those with kindey disease. One such method is to soak root veggies, such as potatoes, sweet potatoes, and rutabaga in fresh water for 2 hours, then double boiling them. Poaching tomato slices in oil and water will leach potassium from tomatoes and lima beans. This cooking method will also leach phosphorous from meats.
