DEM Chickpea pancakes

Hi Guys

So I have been eating rice and fish for quite a while now, its pretty boring to eat now. I decided to try and make chickpea pancakes and put fish inside them and eat them like tha with sauce on the side. The thing is that when I made the pancakes the texture inside was like super dry (if I folded the pancake it would break).

Can anyone please tell me how I can make good pancakes using chickpea flour. I am on a low fat diet and cannot eat eggs or bananas.

Heres what I used to make them

200g Chickpea
1/2 teaspoon baking flour
Some water

Blended all the above ingredients together and fried pankcakes.

Some people use applesauce instead of some of the oil in baking, so that might work.

Everyone needs some fat in their diet, in order to absorb fat-soluble vitamins. So putting a little in the recipe should not be a problem. You also need a rising agent like baking powder in order to make pancakes.
 
Look at a few recipes for "farinata di ceci".

I would add some olive oil and let the batter sit in the refrigerator overnight to allow the bean flour to fully hydrate.
