We just got back from one of our favorite spots, Jibacoa Cuba. Over the last 10 years we have visited a small family run restaurant that makes the best Lechon Asado (pulled pork) I have ever tasted. There was just something that made it stand out. I have always pestered Hector, the head chef for his recipe but he has always said "if I give it to you maybe you don't come back"

Well, on our visit last month he divulged his secret ingredient.

His rub is (and yes I have his permission to publish this) and all amounts are approximate, he doesn't really measure anything so I am just guessing by watching him do it.

1 tbsp sea salt
1/4 tsp coriander
1/4 tsp cayenne pepper
1/2 tsp red pepper flakes
1 tsp oregano
1 tsp white pepper
1 tsp garlic powder
1 tsp cumin
and the secret ingredient..............................................



1 tbsp..............................Unsweetened.......................Cocoa Powder.

That's it. Try it with the normal way you do your pulled pork recipe. You won't be disappointed.
