1 sticks Real Butter
1/2 cup Bell pepper -- chopped
3 cloves Garlic -- chopped
1 cup Onion -- chopped
1/2 cup Celery -- chopped
1 pound Louisiana Crawfish tails
1 cup Green onions -- chopped
2 tablespoon Parsley -- chopped
Cajun Seasoning Too taste
4 cup Cooked rice

Saute in butter the bell pepper, garlic, onion, and celery.
Cook for about 30 minutes over a low fire. Add crawfish tails, green onions, chopped parsley, Cajun seasoning, and 4 c. of cooked rice. Let this steam for about 20 minutes. Add a little butter if too dry.

They will have to wait untill Thanksgiven thats when we start crawfishing again. By then I might have the courageuse (courge) to get in front of the video camera.
