Do to kidney failure, and DW and I being the only ones home , Christmas eve wil be a roasted chicken, wirh twice boiled potatoes (renove mucj of the potasium), and baby sweet peas swiming in butter. We used to put on a table-full of deli meats assorted good cheeses, and multiple different rolls and buns, with black olives, Castlevitrano olives, different kinds of picles, and several condiments. Desert would be a fruit crisp, or cobler, pumpkin pie, homemade fillrd chocolates. Tempeted carefully, Grandma's rea ring, my Mom' date-filled cookies, and a 10 inch, homemade New York cheesecake. If I feli ambitious, I also made cherrt, apple, abd peach dump cakes, and a bowl of real Chantillt creal sitting in the fridge
For something ro do in the evening, I would make Spudnuts pastry dough, and pastry cream. We would then make bismarks, and longjohns, and fill the with the pastry cream or fruit jams. Sometimes we would just roll oit the dough, and top it with butter, brown sugar, nuts, and raisins., sprinkle on cinamon, and nutmeg, roll it, and slice it to make sticjt bins. Of couse a good syrup eas drizzled all over the bins before the were risen. Everybody fed themselves, and we spent the day enjoying each other, and the joys of givinf, and recieving gifts. The first thing we always did was ro read of the Christ-child bith, from scriture. That set the mood for the rest of the day. Now, rhere is way roo much drama in my life. But I will somehow have a great Christmas day
I refuse to let itherd, ot circumstances pull me down.

I am elated tgat so many of you will get to enjoy the holiday with family., abd freinds. Enjoy yiutselves, and eat an extra giid piece of whatever you are enjoying, and be thakful for the love you share with others.

Chief I admire your spirit of not letting life drag you down and being thankful for the blessings you have. To be completely honest I secretly long to visit your home as the ghost of Christmas past, that spread was bigger and better than anything I've ever heard of.

Beautiful post, Chief. Best wishes and a Merry Christmas to you and your DW :flowers:

Christmas Eve. ~~~ Smoked duck, and andouille gumbo with oysters thrown in at the last minute. Pecan pie. Pralines, and other various and sundry candies.

Christmas Day ~~~ Daughter's house. We'll take a sweet potato casserole....NO marshmallows!

Christmas eve (late afternoon and early evening actually) we are going to Jr's. DIL/Jr are making dinner and asked us not to bring anything. We'll bring homemade cookies to ensure the grands are properly sugared up. DIL did a lot of baking this year too, so maybe the grands have built up a tolerance. Is that possible?

Christmas Day we are off to BIL's for Christmas carols and dinner. We are bringing a baked corn casserole as our contribution. The only other things I know we will have for sure are turkey, ham, mashed potatoes, sweet potatoes, stuffing, gravy, salads, and more.

I hope everyone has a wonderful Christmas and Hanukkah!

Christmas Eve --> buffet style -- Baked Ham, scallop potatoes, Mac and cheese, green beans, corn, baby carrots - miscell plates of olives, pickles, sliced beets a couple of dips and assorted crackers. trays of cookies and fudge, other sweets for dessert

Christmas day--> now that everyone is in their own home and just a few of us we are Braving the winter snow and cold and doing filet mignons wrapped in bacon on the grill. mushrooms to go with filets - baked potatoes, repeat of veggies from night before and apple, cherry and chocolate pies for dessert.

iChristmas day and eveming had potential to be good. Had all of the required ingredients, got the oven working again the day beforel. Made more cookies, and hreads. Roasted a 6 lb chicken Cearly Christmas moring and it turned out spectacullar, very juicy, tender, and flavorful.. Chilled it, sliced it for sandwiches. All was ready. Son came home and was very apologetic, and downright pleasant. DW still felt like a victim, informed me that this was her worst Christmas ever, and that I let her down. She hates living whee there is snow on the ground, and has put up with it for 30+ years. She wantts us to sell the jouse and move to somewhere where there isn't so much snow. I am in the part of my life where I'm now living off of Social Security disability, with a little in the retirement fun. She soesn't understand that housing prices here are so low compared to most areas fo the nation. We could get maybe $130K for our two story, 5 b3eroom, three bathroom house on a quarter acre, with excellent water. I couldn't touch a house for under $250K anywhere where the weather was more to her liking.

But there was a great thing about this Christmas. I introduced a young man to spatchcocking a turkey. He followed my instructions for prep, cooking technique, final temp., and carving. His bird came out perfect, juicy and tender, and full of flavor. I gave him tips on making smashed spuds, and how to use a roux to make the gravy. His whole meal, with sides came out wonderful.. His mother called me to thank me for helping him. He is very excited about cooking, and hit me up today with questions about how to make a perfect chili for chili dogs. I gave him instructions about what kind of chili to make, how to season it, how much tomato product, and what kind, and the herbs and spices, he would need, and when to add them.

After that project is done, I will introduce hm to seasoned flour recipes ffor frired chicken, chicken-fried steak, etc, then the world of meatballs, chicken meatballs, Wothwestern flavor meatballs, Italian inspired meatballs, well you get the picture.

My Christmas gift was in being able to help this young man blossom, and give him something to be excited about, We have scheduled some time together to tie fishing flies, and complete my current custom fishing rod project, which was put on hold for the holidays.

I have shceduled time, and have a plan to make DW feel more loved, and to show her that she is loved and is important to me more than any other thing in this world. I keep trying, but it's not easy to pleaase her. Ah well, I make mistakes. I[m human. But I will keep trying.

I hope everyone had a great Christmasm ir whatever holiday is appropreate for them.
