Chili topped with queso sauce?

Today we had a huge craving for our special family chili adorned with homemade queso sauce. It was sweet, sweet, nectar! It was beautiful, a little bit of rice, topped with chili, topped with the queso sauce. With sweet buttermilk mini corn muffins on the side. Has any else tried queso sauce as a topping for their chili?

Sometimes I like a little shredded cheese on my chili, and I usually use cheddar. 'Queso' means cheese, so from your post you made a cheese sauce, but it could be from one or a combination of several kinds of cheese. How did you make your homemade sauce?

I like chili on top of baked potatoes, that's pretty much the only time I'll put cheese on top of chili. I don't make a sauce though, just shredded. Topped with thinly sliced green onions and a dollop of sour cream. Now I'm craving that. :yum:

Never tried queso sauce on top of chili ( not sure exactly what it is , and Id love a recipe).
What Ive been doing recently, is making polenta. Let it get sit so it gets firm, then grill it.

I then take a piece of the grilled polenta, top it with chili, then top that with cheddar cheese, broil it to melt the cheese...

Microwave Queso Sauce

Ingredients:
1 tablespoon butter
2 onion , finely chopped
1 jalapeño, ribbed, seeded, and minced
1 tomato, finely chopped
1 tablespoon ap flour
1tablespoon taco seasoning (I make my own)
1 bag Velveeta shredded cheese
1/2 bag cheese of your choice
1/2 cup to 1 cup of heavy cream

Directions:
Melt butter in a microwaveable container.

Cook on high, uncovered, 1 to 2 minutes.

Add flour stir and continue to cook 1 to 2 minutes.

Add cheese and taco seasoning, cook for 2 to 3 minutes.

Stir and cook for 1 to 2 more minutes until cheese is melted.

Add cream and mix until you get the consistency you're looking for.

Serve warm

We just had that the other night.Not the muffins though.It was really good.
My sons made late night nachos with it.Hubby used it as a sub for cheddar cheese in a burrito.It's a great dipping sauce for taquito's sign me up!:chef:
Wondering now how well it would work for the next time I make tamales.
Something to think about.
