Economic issues aside, certain days of the year are times to save for. Those days we don't do cheap. If you plan/save ahead, you can purchase something special, like standing rib roast or beef tenderloin when it is on sale and stick it in the deep freezer. There are a few items that have been mentioned that would make good sides, but the majority I would never consider serving on special days.
I agree. We usually don't even provide the main dishes, but still spend a good amount. 100-150 bucks for our contribution is pretty normal.

It doesn't start out that way, but as we are shopping, I'll add another dish I'd like to try, or spruce up one I did last time. It is sort of a hobby for me.

I'll go in thinking I'll just do poppers on the smoker, then I'll add wrapped sprouts, then I figure I have room in the smoker, so bacon wrapped dates are easy. Of course, you need beer...

Then my wife decides she wants to make something...

Food is a downward spiral, but it is such a tasty one.
