Kgirl, thanks for reviving this. I have some apples waiting too!

If I might suggest,... when you defrost, put some paper towels under them, it helps to absorb any excess water/moisture.
I do this with bread that I freeze - it prevent soggy spots.

FYI everyone. I have always felt this recipe was a bit on the sweet side so last time I cut the sugar down from 1¼ C to 1 C. I like it better. I may try cutting it again down to ¾ C. I'll keep you posted.

Also, I change the name from Apple Squares to Apple Walnut Cake.
As you cut the sugar consider switching from granulated to brown sugar to replace some of the sweetness with additional flavor.

Also, if the tartness of the apples comes through too much add 1/4 t of baking soda.

Andy ... I would suggest that you file the original recipe. Any significant changes that you make including a name change becomes a new recipe. Thanks for sharing the recipe.
