    BBQ Pro Barrel Smoker

Well, my charcoal grill finally bit the big one. I ended up buying this particular cooker for grilling (for now - I STILL have my ECB vertical smoker), but will eventually use it for smoking some bigger items like briskets. I just started assembling it last night, and should have it finished...

    Two meats at once!

I will be doing another smoke this Saturday that includes two meats: another pork shoulder ('cuz the wifey liked it SOOOO much last time), and a whole chicken. Should I smoke both at the same start time, or should I do one before the other? My thought is to start the pork shoulder first, then...

    Minion method using wok pan

Just curious... Has anyone attempted the Minion method using a wok pan for their coals? If so, how'd it work and how many coals did you use to start? I'd like to try this on my next smoke. Thanks in advance!

    ET-73 temps wonky?

Not sure what's up, but my Maverick ET-73 seems to be on the fritz. At room temperature the food probe is about 5 degrees warmer than the smoker probe. When I stick the probes in ice water the temps are about the same degree of difference. In HOT water the temp difference is WAAAAAY off. The...

1st attempt at smoked pork shoulder

Hey everyone! My apologies for not posting in a while. :( Anyhow, as the title suggests, I will be attempting my first pork shoulder on Memorial Day (around 11 lbs.). I was thinking of a hickory/apple wood combo for the smoke, with a simple rub and injection. Will definitely post pics...

    Brisket on an ECM Brinkmann

I am going to attempt a brisket for my next smoke. How big a brisket could comfortably fit in my 30 in. vertical Brinkmann? Don't want to get a piece of meat and have it not fit. Thanks in advance everyone!

    My first smoked turkey

Here's some before and after photos of my turkey I smoked this afternoon: Before: After: The turkey was 11.72 lbs. It cooked in just over 3 hours at an approx. smoker temperature of 275-280 (temps were monitored in the breast and thigh to make sure they were in the acceptable range)...

    First cook on my ECB!

Decided to do a couple slabs of spareribs this morning. Started at 4:30 AM to get the fire going (the outside temp was 19º F). Started with 25 briquettes, and the temp got only to 151º F. Added 20 more and she stabilized at about 250-260º. Each hour I put another 20 coals on, along with some...

    Just bought a new toy!

Sorry I haven't been around much lately - a little thing called life has gotten in the way. :( Anyhow, I just recently purchased a Brinkmann 810-5502-W Square 2-Door Vertical Charcoal Smoker. It's all I can truly afford at the moment. After Googling this model I noticed several mods people...

Trouble regulating temperature in high winds

Not sure what I did wrong... I was cooking up a rack of baby backs yesterday, and was having alot of trouble keeping a constant temperature in high wind conditions. Kept adding coals, thought I plugged all leaks, closed vents mostly... Any advice?
