We teamed up with our friends from half baked hippies and called our team hippie nation. Had a great time took a 5th in chicken 9th in ribs 3rd in pork and 12th in brisket. 6th place overall.

The brazilian grill near us has a great chicken, about the only thing I can pick out of the rub is salt pepper and cinnamon, but I know there is much more to it.

Has anyone seen the rules for the wing category at SAMs. Is it the same as the chicken category or can we fry them.

One rack was blues hog rub and sauce. Half original and half honey mustard. One was butt rub and home made sauce. They liked the blues hog.

It's a breed from England called berkshire. With a name from Japan.

The bottom two are the kurobuta, a little darker than I like but had a great flavor.

We cooked a couple racks of kurobuta spares. The texture and tenderness put them over the top for me. We paid 28.00 for two racks 4.49 a pound. Anybody else try these, and what did you think?Was it worth the extra money?

It might just stay at home. I've got 3 uds but like the brisket on the offset.

I'm going to work on my pit this weekend, I would like to be able to use it in a comp. I'm working on a plate where it's connected to the fire box. I've seen some that are only 12 to 14 inches with the exhaust lowerd to grate level. I've also seen the plate run almost all the way through the pit...
