    Grilled Chicken Quarters for Dummies

Lemon Pepper thighs, risotto, & spinach/greens salad

Thanks, guys...I was pleased, my first time making lemon-pepper chicken at home, believe it or not, and it did taste very good - my son had a late evening snack of another thigh and also took one to school as a part of his lunch, so clearly he was happy. :) No credit to me for the seasoning...

Doing the unthinkable (for me at least)...

Lived there for a year...Seattle is the most beautiful city in the world for several months a year...but unfortunately there were a few to many months when it was a mite bit cold/dark/wet for me. :) Welcome to the SoCal 365 days a year outdoor lifestyle. :) You're gonna need to get a...

    Tandoori Chicken

No problem...just trying to share back a little of all the stuff I've learned reading here. If you can find the Tandoori seasoning packages at a local store (like I said, the brand I used was "Shan" - it makes it pretty easy. It won't quite match what you get from a true tandoori oven, but it...

Doing the unthinkable (for me at least)...

Weber...for performance/quality over frills, can't be beat. Spirit E-310 can be found for around $499 Genesis series goes up above $600 I bought a Weber this year and don't believe I'll use any other brand of gas grill in the future...love it. Never loved a grill before...

    Tandoori Chicken

Thanks for the comments. It was pretty easy to make - we used a package from a company called Shan for the Tandoori spice, recommended by some Indian friends of ours for "quick and easy" Tandoori. We love home made tzatziki sauce (juice from home-grow meyer's lemons & fresh mint in it=yummy!).

Impulse buy is going to get me in the dog house

You need to join the BUUC (Barbecue Underground Upgrade Club) so you can access their secret methods of their organization, including: - The 'What-Upgade?' upgrade ("No, nothing's changed, we've always had a sear burner, I just never used it before.") - The 'Safety' upgrade ("Well of course...

    Tandoori Chicken

My wife decided that she wanted some Indian food, so we got our Tandoori on.... Marinated thighs in tandoori spices, yogurt, etc., for about 8 hours. Placed on baking pan for initial indirect cooking. Cooked for about 45 minutes indirect at 375 on the grill in a baking pan (covered w/foil...

What's on your Superbowl menu? Looking for inspiration...

Yeah...so far the "warming rack" on my grill was perfect for this purpose. I'm going to work on a second level for grilling (some long bolts holding up a smaller grill) for when I'm doing greater amounts of food.

Steak reverse sear worked really well...

Damn...I was wondering about that. My boyish innocence led me on to the face plant. ;-)

Steak reverse sear worked really well...

Larry: Instead of searing on high heat first, you cook indirect (I had the grill at around 275-300) until you get to a rare state (I used 120 degrees) then you put a little olive oil, butter, or other fat on it, season, and then go to high heat to finish/get crust. Kinda like the same way you...

Steak reverse sear worked really well...

Did a couple of tbones reverse sear (start w/indirect, end w/sear) the other night - came out really nice. Seasoned them and put on indirect heat until temps got up to about 120. Then brushed w/a little olive oil and re-seasoned and moved to direct heat until done. Used a probe to check...
