    What is Hereford Beef

"Hereford Beef" is the same kind of thing as Safeway Stores "Ranchers Reserve" The only grades that are real have "USDA" before them. Examples, Prime, Choice, Select, Standard, etc. Everything else is made up by the Advertising Department. The vast majority of beef cattle in the USA are the...

    Build a Smoker - how?

I also suggest getting a Weber Smokey Mountain (WSM) http://www.bbqs.com/wsm-18-%C2%BD-p-887.html It's fool proof. I load up the charcoal using The Minion Method and it burns all night holding temps with no fiddling around. http://www.virtualweberbullet.com/fireup2.html

Baltimore Pit Beef ...does anyone know

Would this store be "Safeway"? The Safeway in my town sells "Ranchers Reserve" I tried to explain to my wife that Ranchers Reserve was a make believe grade of beef. If it was really "Choice" they would call it USDA Choice Beef. I might as well been speaking Chinese to her. :(

    First Brisket

After cooking I wrapped the brisket in foil and put into a cooler for 2 hours. Then I sliced 2/3 and chopped 1/3. I couldn't eat until later, because of errands I had to run with the kids. I just reheated some of the chopped with sauce and ate it on a potato bun. It was tasty! Next time...

    First Brisket

I just finished cooking my first brisket. My local meat market had 3 to choose from and all were frozen. I picked a 7 pound trimmed one. It looked to be a flat to me. I saw nothing that looked like a point. I started it about 11:30pm last night in my WSM. I cooked until about 11:30am the...

Telling when Baby Back Ribs are done

When you pick them up by the end they are suppose to bend in the middle when done. UPS is suppose to deliver my WSM on Monday. I'll be trying it out with a Pork Butt next Friday night. I've been using my kettle until now for pork butts. They turn out good, but with a kettle there is too much...

Telling when Baby Back Ribs are done

Are ribs undercooked if some rib meat is still sticking to the bone when you are eating them. Or do I need to use foil to make sure the rib meat comes cleanly off the bones?

Telling when Baby Back Ribs are done

I cooked 3 racks of baby back ribs on my weber kettle. Temps averaged 225 to 250 Time cooking was about 4.5 to 5 hours No foil Toothpick when through the rib But there was no bones sticking out at the ends of the ribs. I've read that when ribs are done the meat shrinks back slightly from...

    Amazon deal...hurry

I just bought one from Amazon on Tuesday for $220.65. The next day it was $206.66. I got Amazon to adjust my price to $206.66, but they would not price match the lighting deal of $182.99
