    For those of you who compete in more than 5 contests each year, what do you do to cover the cost of competing? I'm trying to get a couple of sponcers but they aren't easy to come by.

    Reccomendations

    I've done a couple of parties for friends but am considering some more catering jobs but would like to avoid some of the mistakes. What would you reccomend I do if I were starting a BBQ catering business? I only plan on deliver finished product at first. I'll move on to serving and setup later.

    Boiled Peanuts

    I'm tweeking my brisket injection and was wondering what you inject your briskets with? Mine is pretty good but I'm wondering if it isn't too diffrent from what is expected by contest judges.

    Adding wood to the WSM

    I only add about 3 baseball to softball sized lumps of hickory right after I put my meat on my WSM. That seems to put in plenty of smokey flavor without over smoking it. The WSM is a really effecent cooker, especially at just around $200.

    Food safety

    If the internal temp of the freezer was above 40# then the whole rib slab would be fine. I would immagine that if the majority of the slab was frozen then the whole slab would be fine. I sure you safe with the frozen portion of ribs.
