    I think what you're talking about is a maze. Several pit makers offer them. Check the Klose site, I know he builds them for his offset smokers or they are easy to make if you can do a little welding. I have made a couple for my pits. Here's one for a Spicewine..........

    Probe Wires

    I had this problem with the probes on my Nu-Temp. A good way to stop the moisture problem is to get a piece of high-heat shrink wrap and put it on the probe where the wire goes into the probe. Only needs to be about 1" long to cover the joint. You can get the high-heat shrink wrap at Radio...

    Did you check the temp probe for the Guru or just the TT?? There's always the possibility of the Guru probe being off.

    Fast and Furious Brisket

    That looks real tasty. I've tried this method a few times and it works good. One thing I did notice was that I had to use more pecan chunks than usual ( a little heavier smoke ) to get a deep smokey flavor in the meat. Maybe because of the shorter cooking time ?

    That made me remember going to my Grandma's for holidays when I was young. The men ate in the dining room. the women fed the kids in the kitchen-then after the kids were done they would sit in the kitchen and eat. Funny how things change have changed over the years.
