    Dave that sandwich is killer. Thanks for posting the whole process. I haven't made pastrami for several years. We've got another 2-3 weeks of fresh fish, then I've got to get back to some cured meat. I am hungry now.

    Looks excellent Old Dave. I like pulled chuck, it has a nice beefy flavor. We had ribs, potato salad, blueberry cobbler, and homemade ice cream here.

    I had trouble finding pork bellies, but finally found them at a local Asian store. They are spendy there, in the $4-5/lb range. This morning the local Costco had them at $2.29/lb. Now I can make bacon cheaper than I can buy and it is custom cured, smoked and sliced.

    Hi, where do you live in Alaska? I personally have no experience with pellet smokers. I have found Chuck at True Value in Anchorage helpful and they sell Traegers. During the summer he cooks snacks for customers on a Traeger. If you live here in ANC talk to him.
