    Dehydrating pastrami?

There is balck pastrami and red pastrami. Black pastrami is more lean and has to be sliced at the deli. Red pastrami usually comes pre sliced in a 10 lb bag at the deli. then you buy it by the pound. It is really fatty and tastes way better then black pastrami. Kind of looks like bacon, but...

    Dehydrating pastrami?

We bought the pre sliced red pastrami. I've been doing some reading on dehydrating deli meat and it seems the lower the fat the better. I think we will cut off what bits of fat we can and to the rest. I guess we'll see what we get. I only have about 1/2 lb. I might throw some other stuff on...

My husband and I had some jerky the other day that tasted just like pastrami. It was so good! Now I want to dehydrate some pastrami, but wasn't sure how to do it. I looked it up on line and people agree it is good, but no one tells me how to do it. What temp how long, so I have to do...

I am not in WI. I can't imagine canning on that scale. I am making my 3rd batch of applesauce tomorrow. I also have help, it does take time and yes, very sticky floors. But sooo worth it. I took the weekend off. It's back to "work" tomorrow. I'll also make a batch of apple butter and...

    Question About Cracked Jars

I had my first jar crack on me last year (first time in 20+ years) then another. It was in my pressure cooker, which I have only been using for the last 5 years. I only did water baths up till then. Anyway, I realized I was tightening the bands too much. It says finger tighten and I was...

    ? on tipped jar

I HATE MY CANNING RACK! I ordered a new one today. There are only 2 rings on the bottom, so things always tip a bit. My new one has 4 rings!! I was getting one of my quart jars out and it tipped over, totally sideways in the water bath. It took me a bit to set it upright and get it out. I...

    Disappointing, Partly

glad the lemon curd came out good after all that work. My oven drives me crazy. I got it a year ago. My oven does the same thing. I think they try to make them more "efficient". It will heat up then almost go off just to heat up again. It has a convect bake, but it's not really any faster...

? on canning apple pie filling

I made plum sauce (like apple sauce but with my prune plums) last year because I had sooo many. It came out really good. I have never had pear sauce. I planted a pear tree last year, a keifer. I was going to get another pear this year, but they were all out by the time I went looking. When...

? on canning apple pie filling

interesting. I just made a batch of jam and will probably make some apple sauce tonight. I usually make apple pie jam, but I still have about 10 jars from last year. I found a caramel apple jam recipe. I didn't have the clear butter extract it called for, so I used maple extract. It came out...

    Canning tomatoes (soon peaches)

that peach salsa is a great idea! For some reason our peaches didn't ripen on time this year. Theya re still fairly young and we haven't gotten a bit crop yet. We had a bunch of peaches, but they didn't ripen. They are small and just kinda ripening now ( should have been in July). Now I have...

? on canning apple pie filling

I did some more research, and it seems you can process the apple pie filling WITH OUT the clear jel and add regular corn starch before cooking the pie. Has anyone done this and is it the same result?

? on canning apple pie filling

This is the first time I have canned apple pie filling. I know I can't use corn starch. The recipe called for ClearJel and I bought Sure-Jell. Is there any way I can use the pectin instead of the ClearJel?
