    Potatoes defy cooking

This has happened for the third time in about six months. For mashed potatoes, I dice a russet potato and boil for about 20 minutes, or until tender. NOT. 30 minutes, 40 minutes, 50? Are you kidding me? The potato will not get tender. I try to whip it, as usual, but it is grainy and tastes a...

    Need help on bake time

I've been baking date loaf cakes for years. The batter fills a 52 ounce loaf pan and I bake it for an hour. How long would I bake a mini loaf pan, 20 oz.? Any baking conversions? Thanks for your help, Phil.

    Strawberries and, no....really?

Last night I was ask if I wanted any cottage cheese with my fresh strawberries and Cool Whip. I don't know why I said yes. It was outstanding. I guess it's one of those ingredients that makes you say "what's that", but it added flavor I couldn't believe. Fresh Strawberries, Splenda, Cool Whip...

    White chocolate won't melt

Weird. I have 12 oz. package of Nestle's morsels, ex. date 2-10, over a double boiler and all I get is a packed glob. I put it in the microwave and still no melt. Bought a new package and dumped it in the same double boiler and it melts okay. What's up? Old package? Package was sealed. Also...

Coconut cream pie is a mess....

Ok. We altered the standard recipe by using Coco Lopez in the mix. I knew this was risky, but we did it anyway. I'm thinking we should have used less milk. Also, the meringue collapsed and became weepy. Other than that it was great, considering it fell apart when you sliced it! While I'm on the...

Clarification on covered, crispy, southern fried chicken

A little while back in a post about fried chicken, I said we covered our chicken when frying and that it is very crispy. I have forgotten who, but they said covering chicken would make it soggy. We just finished eating a tender, crispy fried chicken dinner and I watched my wife cover it while...

    I'm tired of commercial bread

I've been watching bread rise.... to the tune of $3.89 a loaf. And when you buy the store brand it's tasteless and gummy. I don't like thick sliced bread, and when I started buying Peppridge Farms thin sliced bread, it jumped to almost four dollars. I don't eat sandwiches that often and end up...

    Ina Garten's company pot roast

If you don't try this, your missin' somethin' special. I'm sure there are several of you out there that make a pot roast along the lines of Ina's, but I never have. This is an outstanding meal. I used an average roast. Actually it had been frozen for eighteen months. I also cut down on the salt...

    Dishwasher safe cookware?

Why is some cookware unsafe for the dishwasher? A dishwasher is a metal box that sprays hot water and detergent. What's the big deal? Personally, I never put metal cookware in the washer because I use them more often than I use the dishwasher. If it's the detergent, well, I use dishwasher...

Do you use a "real" butcher?

How many of you actually shop at a meat market and not the grocery store? I've really become irritated with the lack of knowledge, support, and variety of the grocery store "meat market". I asked the "butcher" at the grocery store yesterday if he had any short ribs. A painfull, puzzled face said...

    Chili cheese log

This is a simple, outstanding cheese log. I've been making it since a neighbor gave me the recipe in '74. It's great for any occasion and works well for the holidays. It's really addictive. At room temperature, blend an 8 oz. package each of Velveta cheese and cream cheese. Add a cup of fresh...

Peeling hard boiled eggs without peeling

Hi folks. I'ts been too long since I've posted but it's never too late. I hard boiled eggs this past summer for an outdoor party and killed eight guests via food poisioning. I'm kidding, of course. Anyway, I stood for what seemed like hours peeling the suckers. I don't remember this being so...

Fruit n' nuts on your cereal?

I've been doin' it for years. I stepped it up a notch a few weeks ago with some spices. I like a banana, followed with Post Grape nuts. I add black rasins and chopped pecans. I then add a little brown sugar, cinnamon, and a dash of nutmeg. I pour on the milk and add a handfull of Post Tostes or...

    Need Fresh tuna help

I'm sure this is an old subject, but I've never prepared fresh tuna. Wife hates anything that swims, but I thought, after 40 years, I'm grillin' this sucker. Problem is the "doneness" of the fish. Everything I've seen from the grill appears rare, and I mean red, rare. How do you grill yours...

I'm hooked on this Trail Mix...

I just picked up a bag of "Sam's Choice Cajun Trail Mix" at Wal-Mart grocery store. It's a blend of spicy peanuts, butter toffee peanuts, sesame sticks, toasted corn, honey sesame sticks and almonds. It took a lot of will power to put'em down. I can't believe they are that good. If you have them...

    Angus beef is superior

I've grilled too many steaks not to be totally convinced that angus beef is superior. At least here in Texas. I simply couldn't be more pleased with the last four rib-eyes I've grilled, unless they were free. Every bite is, wow! They have more flavor and are far more tender than anything else...

What's with our kids and box cookin'?

I look in many a shopping carts these days and laugh. Young people buying nearly everything prepared for them in a box. There is a whole gereration out there that has never tasted home cooking because they, or their parents, were "too busy" or too lazy. It's a real shame that kids think mac 'n...

Ever have a banana this way?

Light years ago, my mom would slice a banana, place it on a leaf of lettuce and spread mayonnaise and sprinke cocktail peanuts on it. Just wondering if anyone ever heard of it. It is quite good, actually.

Like cheese on your tossed salad?

Since I had some fontina left over from a recipe, I grated some on a simple tossed salad that consisted of, romaine and iceburg, lettuce; slivered onion, celery, bell pepper, black olives and fontina cheese, splash of Italian dressing. Fontina is fast becoming a favorite of mine.
