    Grinding your own beef

How much a pound is Costco's ground beef? Just curious.

    Grinding your own beef

It's all about the fat and the super market meat is tasteless.

    Chicken Flavor

    At least change brands.

    Pancakes!

Fluffy pancakes.... Many good recipes posted. I like to separate the egg and beat the white to soft peaks and fold into the batter. As a kid, I'd make really thin Bisquick pancakes, saturated in butter and black raspberry preserves. Then roll them like an enchilada.

    Grinding your own beef

I gave up.... The idea sounds good and if you can buy really good beef, well, it might be worth while. Point is, you need good beef. We have been using a butcher that has been in Dallas for over 50 years. They sell only prime beef. We are paying $8.95 @ lb. for what they call 85/15 ground beef...

    Chicken Flavor

    Potatoes defy cooking

I'm thinking this is the problem, hence the green taste.

    Potatoes defy cooking

I covered them the last ten minutes to keep the moisture in.

    Potatoes defy cooking

This has happened for the third time in about six months. For mashed potatoes, I dice a russet potato and boil for about 20 minutes, or until tender. NOT. 30 minutes, 40 minutes, 50? Are you kidding me? The potato will not get tender. I try to whip it, as usual, but it is grainy and tastes a...

Smoked Spareribs, no foil versus foil test

I'm way late to this party as this is my first post in about one year. (Got busy) Anyway, I have used the indirect method on my Weber to set the smoked flavor on the ribs. Usually baby back ribs. After about an hour, I wrap them in foil and finish them in a 250 oven. I use only salt and pepper...

    Thighs on the weber

I know, Andy, but when the fat hits the hot charcoal or grate, great things happen. I don't even soak wood any more. I just drop it in the center of the hot coals about ten minutes after I set the chicken on and cover. To each his own. His might tase better, I dunno.

    Thighs on the weber

I was killin' time and saw your thread. Could you explain the need to grill over foil. Some of the best chicken I've ever eaten was indirect cooking on the Weber.

Bean skins always come off from soaking or cooking

Cover the pinto beans with water and bring to a boil. Drain and cover with fresh, cold water. Add salt pork to the beans and bring them to a boil, again. Then cook the beans on a low heat 'till tender. Check the water level frenquently. They should be done in about two hours. I then season to...

The red peppers are sweeter than the green.

    Need help on bake time

I just kept an eye on it through the oven window and was judging it by the color. I never opened the oven door. I think you're right about the time. It takes an hour for a one or two pound meat loaf. This cake is about the same.

You are exactly correct. I'm just surprised it took that much time. Thanks again.

    Need help on bake time

Thanks for your input, Princess, but the timing wasn't even close. Those little loafs took fifty minutes. I simply kept an eye on the baking and could tell from the browness on top. They came out perfect. Thses loaf cakes don't respond to the tooth pick or knife test. That is the reason I posted...

    Critique Your Thanksgiving Meal.

I'm so thankful that no one was here for lunch because it wasn't very good. In fact, the turkey goes out with the trash, today. I've smoked many a bird on my cast iron smoker with wonderful success, but this bird was tough. I did it the same as always, it just didn't happen. We were only cooking...

    Need help on bake time

I've been baking date loaf cakes for years. The batter fills a 52 ounce loaf pan and I bake it for an hour. How long would I bake a mini loaf pan, 20 oz.? Any baking conversions? Thanks for your help, Phil.

    Dry pinto beans?

Post it on another thread. I'd really like to compare it to mine. Mine? What am I talking about. I got if from The Joy of Cooking post WWll book.

    Dry pinto beans?

I've never soaked mine. I rinse them clean and cover them in about two inches of water and bring to a boil. I then strain them and add fresh water, thick sliced bacon, garlic. Bring to boil and simmer an our and a half. Then add quarter sliced onion and two chicken bullion cubes. Simmer till...

    Strawberries and, no....really?

Last night I was ask if I wanted any cottage cheese with my fresh strawberries and Cool Whip. I don't know why I said yes. It was outstanding. I guess it's one of those ingredients that makes you say "what's that", but it added flavor I couldn't believe. Fresh Strawberries, Splenda, Cool Whip...

    Home cooked vs prepared

Box and canned cooking is here to stay because of "time". Two parents working to pay taxes and tend to kids. I was luckey enough to be home early and start dinner, back then. I started making scratch cakes when I read the ingredients on the box one day. If you never eat better food you'll likely...

    What's your newest discovery?

Making a cake for a local meeting, I decided on German chocolate. Since I like the frosting all over the cake, I was thinking of something different for the middle. I decided on a cream cheese frosting. Then sweetie pie looked up a common recipe and said how about adding coffee? 3 oz. cream...
