    Cooking potatoes in coconut milk?

    Boil the potato any way you like to get it half way there and then finish cooking in oil with flavor....In my opinion, if coconut milk is being used, then it should be used for another ingredient than potatos. I would use coconut milk, lemongrass and a curry to "poach" a fish and then cook...

    I agree 100%, but also, don't add too much oil......you are not pan frying, you are searing or sauteeing. Too much oil also defeats the purpose. 2 Tbls. is enough for any dish on the Saute station

    Cajun seasoning is usually a mix or spices like salt,pepper, garlic powder and cayenne pepper (this is basic) I buy mine. Emeril's Essence is a good cajun seasoning i also like Luzianne (sp? like the tea)

    I'm weird, when i was a child (kinda still am...lol) boiling was the only way anyone in the family did corn. I refuse to boil it. I roast it in the oven(husk on, no prep) or grill it the same way. That is the best in my opinion

    Yes,you can use them on gas, however, depending on the flame, the bottom can get soot on it and generally people who buy copper pans dont want them discolored. This can be avoided by cleaning the bottom of the pan thoroughly afetr each use...Gas in my opinion is the best cooking medium

    Klogs.yes, K. they are the best and most comfortable shoes for the kitchen, they are slip proof and at the end of the night you can slip out the soles and run them through the dish washer!

    hey IC remember when i did the surf and turf wellington for mothers day? McCue, I did a truffle oil infused bernaise (a suggestion from IC) it was killer, You can do lobster mashed potatoes with black truffles. Cut your meat yourself or you will pay a couple of dollars more per pound.

    MIM BBQfest is the third week in May every year(17-19 next May) Musicfest is the first week and the sunset symphony is the fourth week. May rocks in Memphis! Come on down South for some good blues and the best BBQ in the world!
