    Hello again.

I've posted here now and again over the years. I'm older now; poorer now; probably less intellectually attuned now. But I'd like to rejoin your community. Learn where I can, contribute where I can, and not make a nuisance where I can avoid it.

    Chicken stoup

Old bachelor cooking. Meat and Stock from six chicken legs, leftover Chinese takeout rice, carrots, celery, onions, peas, garlic, and thickened with flaxseed meal. By the way, gonna take a minute to get used to this new format.

    Hello folks

Not exactly a new member but I haven't posted for a few years. Just saying hello here and we'll see if I have anything interesting to contribute.

    Upcoming Releases

I've never commented here on something not-yet-released. I think The Unforgiveable's, limited theatrical release Nov. 24 and Netflix stream December 10 is worth creating a new thread. https://www.youtube.com/watch?v=JNUjx7LZoiU

    Salt

For a long time, these were the only salts in the cupboard and Morton Kosher was virtually the only one I ever used. Ever since the sauerkraut adventure I've been second-guessing that decision. Many years ago I routinely bought Diamond Crystal Kosher from a butcher shop but don't get over...

    Pictures Gone Sideways

I had to get a new phone. Never had this problem with the old one. Here is the original picture. It is3000(width) x 4000(height) pixels and 1.61MB. It displays correctly on my phone and desktop but sideways in a DC post. Seemed only logical to assume DC was changing the image for some reason...

    First Hand Pies

Mentioned a while back wanting to add hand pies to the menu. Got a round tuit this afternoon. Crust is just Pillsbury biscuit but the apple pie filling is homemade and I'm counting it as a pretty good first try. Next up meat filling and scratch crust. Would like to try Helen Rennie's Pirozhki...

Roast veg in foil lined cast iron

Don't remember seeing this before. Stovetop vegetable roasting without oil (charring, blackening) in cast iron is so hard to clean and restore the pan's seasoning that I've long since given it up. I really like the simple technique at 6:20 in the video. https://www.youtube.com/watch?v=zXI806AanOI

    Sauerkraut

Starting my first batch of sauerkraut tonight. Should know if it's any good in two or three weeks. 660 grams savoy cabbage 13.2 grams salt 1 tsp caraway seed 1 tsp dill seed 1 tsp mustard seed

    Milk Kefir

While back, in a side discussion about yogurt somewhere on this site, I mentioned the intention to try my hand at kefir milk, maybe even kefir cheese. Finally got my first shipment of milk kefir grains; USPS lost the first batch. These things are living cultures so it's kinda like adopting a...

Does anybody think this is healthy?

I'm as big a fan of Rick Bayless as anybody. But this looks to me like at least 6 ounces of fat, probably more, in a two taco serving. Watching the video I thought sure he'd sure he'd trim some of the fat after cooking. Six ounces of fat is 168 grams and 1512 calories. I guess that would be a...

My New Italian Mentor and Adopted Nonna

Discovered this adorable lady in the wee hours this morning. What I love about this is the simplicity of her cooking. I think Bastianich and Batali would both approve. Her polenta is exactly like Southern grits made with coarsely ground yellow corn. Only difference; Because I'm inherently lazy I...

    Townsends, 18th Century YouTubes

I've watched many dozen of these in the past couple/few months. They are all about life, mostly cooking, in the 1700s. I find them invariably interesting, entertaining, and, dare I say, educational. I'm not watching for the recipes, don't really follow recipes anyhow, but I think they have...

    Rolling Pin

I cook for one. Probably always will. Haven't had a rolling pin for many years. But decided to add hand pies to the menu so gonna need something like a rolling pin. Liking the looks of this one. Inexpensive, small, but adequate for hand pies I think. Thickness discs seem handy but maybe just a...

    Pluots, Ataulfo Mango

Yesterday's grocery shopping produced two fruits I've never used before. top: Pluot. Plum apricot hybrid. Looks like a plum; inside said to resemble apricot. bottom: Ataulfo Mango (sign) Champagne Mango (label) Experience, advice, opinions?

    Hullo again

Hi folks. Been off the reservation for a year and a half. Gained back half the weight lost; lost half the health gained. So afore wakin' up dead, gonna try being less stupid again. If you don't mind very much, I'd like to go back to sharing my journey and learning from yourn.

    Strength Training Anyone?

For most of the last couple of years, I've been losing weight. Near the end of that now. Don't want to get much lighter but would like to get leaner. I've never been interested in weight lifting or bodybuilding. Truth be told, I've kind of held that whole world in contempt. But now it seems...

Sippin' Whiskey and Liquor Store Delivery

I'm no connoisseur, don't play one on TV. Some years past I "occasionally" imbibed "Old Charter 10." With "prescient" insight colored by fond recollection, it occurred to me, one relief to the boredom of self-imposed quarantine is liquor store delivery. So I logged on to a very highly regarded...

My Best Delivery Order So Far

I think they're improving. Today was the first delivery with no silly substitutions or errors. They delivered seven bags with barcoded labels numbered one through seven of seven. Still room for improvement. Advertised 99 cents per pound frozen turkey breasts could not be selected from the...

    Molly Tuttle's Veggie Burgers

Molly Tuttle posted this video today. https://www.youtube.com/watch?v=vYX9zZZKbUg&t=313s Fortunately, Molly doesn't have to depend on her cooking skills to make a living. On her day job, she is one of the best guitar flatpickers of her any generation. In the video below she is playing with...

    Grocery Delivery

I was excited when this option began to become available a year or two ago but I've been less than enthused with the results so far. The coronavirus events have made these services potentially more useful but also more fraught. In hopes of benefitting from each other's experience, which...

    Profiteering on Amazon

I won't link to any specific article because no matter which one I pick somebody is going to call it a fake news source but use any search engine you want with keywords like "Tennessee man, hand sanitizer" and you see a bunch of stories about a guy who bought over 17,000 bottles of the stuff to...

    Aquafaba?

So I'm just killing time whilst washing dishes listening to a TestKitchen YouTube about nothing in particular when they commence to talkin' about their new discovery - bean juice? After ridiculing me for years for not throwing it away! See 16:35 below: https://www.youtube.com/watch?v=KSusTxwjyY8

    Homemade Yogurt

I want to make yogurt. Would like to make it using: An Instant Pot with a Yogurt function ½ gallon 2% low-fat milk Starter Culture - Chobani Greek Yogurt Non-Fat Plain The leftover Chobani came in a 32-ounce container opened about 1 week ago. It is stamped with a sell-by(?) date of Feb 27...

    Dinner Wednesday, 1-22-2020

My appetite seems to have adapted to reduced calories. I had about 300 left in the budget but wasn't overly hungry. Made a two-layer fruit and yogurt bowl. Avocado and lime on the bottom. Yogurt and blackberries on top. Thought about adding honey but honestly didn't miss it. It would have made a...
