    Brunswick Stew

Yes the veggies are quite soft but akin to crock pot recipes you get a great marrying of flavors by cooking for so long. I think this is similar to a Kentucky Burgoo. Its a very traditional southern recipe, it was very popular in NC where I grew up. This is just my take.

    Brining and smoking a turkey

Hope you don't mind if I go slightly off topic. I love smoked turkey though I have never cooked one (but do have a smoker). I would highly recommend deep frying your turkey. I have been injecting and deep frying our Thanksgiving turkey for about 9 years. Only the skin gets slighlty greasy...

Which is better to fry with: shortening or veggie oil?

You could use any of the three. Canola has a mild taste and I think it has the least trans fat. Shortening would probably yield the best taste (Krispy Kreme uses a partially hydrogenated shortening). Peanut would be fine and has the highest flash point of the three but is also the most expensive.

Good point by June. I have baked these also. They are more 'fluffy' and less crispy but healthier, still very tasty though. I've been meaning to get a misto, as I had to brush my oil on.
