    Freezing Chicken

If you make a wet based breading, it will work better. Bread the whole breast and fry them 1/2 way. Allow too cool in the fridge. Cut into 1 inch pieces. You should be able to freeze them for a short time. Take the pieces out as needed. You should only have to fry them for a couple of...

Need a dessert for 21st birthday party!!

We have something we make here called Bouille. It is pretty simple. You make a fresh vanilla custard, then take an angel food cake, which can be store bought. cut or tear it into 1 inch square, and add it to the custard. This is also best served warm. It takes about 15 minutes to put...

How well do you like your steak?

Rare to Medium Rare. I just do not like it cold in the middle. The only thing is hamburgers. I do not care how good the meat it, it has to Medium Well to Well. This is strange because I taste the raw meat to check the seasoning. Something I learned from my grandmother. But, we raised our...

    How to peel a potato...

I buy Yukon Golds now, and the peeling is very thin, and quiet taste. I do not peel them any longer. Other than that, I get fresh red potatoes when they are in season, and they only require running a knife along the skin for it to come off.

    Infused Olive Oil

I do this all the time. I previously added the seasoning directly to the oil, but it was a pain when it would get caught in the bar pouring stopper. Now, I put all the seasoning in one of those metal things that are used for tea. I heat up the oil for a while and when it cools, I put the oil...

My next project - Marinara Sauce

I made all of my boy’s baby food myself. It was so funny when my son was about 6, he is 12 now, came running off the school bus to tell me something. I had no idea what it was. He was so excited. He told me, “Daddy, do you know that they have mashed potatoes in a box and spaghetti sauce in a...

Name TV chefs / cooks from days gone by ...

I was a fan of Julia Child’s until I saw an interview she did with one of the big TV News Anchors on one of their magazine programs. My next project - Marinara Sauce

Cook plenty of sauce while you are at it. It is easier to correct a mistake if you have a large amount. Like wine, it improves with age, and freezes great. As I said in previous post. If you have the sauce, and you keep browned ground meat in the freezer, you can have pasta with meat sauce...

    Turning 40 gag gift

You could try "39 and Holding" or "1st Anniversary of 39th Birthday." As I remember, my mother had 17 of those anniversaries before she got a grip. Besides Depends and the Walker, you could get her some Beano, Geritol, a pair of cheap reading glasses from a Drug Store, and application for AARP...

    You say potato, I say?

Love Yukon Gold. The only thing that is better are red potatoes right when they are dug, and you can remove the peel with a brush. I never peel Yukon Golds. They are super sweet, and the skin is very thin. They are great raw with just some Paula Deen House Seasoning.

    Pickled Garlic

If you like the sweetness of pickled garlic, I would also suggest you try pickled leeks. They are not like Holland Onions. You can find them at your local asian market. They are also fantastic in Martinis.

Do I have the Taste Buds of a Goat ?? ( be kind)

It is the same thing with navel oranges. Yes they grow them in Florida and California, but the biggest and best are from Burass, LA. They are somewhat hard to find now because Katrina wiped out most of the trees. They usually are the size of a grapefruit, or softball, and they are the...
