    Been absent for a bit.

Oh no! I'm so sorry about the loss of your precious pup.

    Good Journey Chief Longwind

Wow! :( I'm so sorry for your loss! He was such a great guy, generous in spirit and quick with the dad jokes. I have chatted with and interacted with him since pretty much the beginning of my online forum life, and he has been a fixture here virtually since the beginning. This place won't be...

Oh, no! I'm so very sorry to hear this. She was a wonderful person and a fixture at DC. She'll be greatly missed! My condolences to her family & friends.

    Adventures With Mom

It sounds like it will work out great! I've enjoyed keeping up with your adventures; hopefully with her close by the adventures will continue! My own mom is 76 now, hard to imagine! She's still mentally and physically robust and barring something odd, will probably outlive me! Her parents...

    Chili Verde

Potato would be fairly common and traditional but I try to keep the carbs down. Hominy has some carbs but I use very little, just an accent.:chef:

    Chili Verde

Looks good! I make Chili Verde every other week. I don't use masa in it (although that would be fine) but I usually add a can of hominy to mine. And while it's not strictly traditional I like to cut the pork butt into 2" thick slabs and do 'em for about an hour on my Traeger, 30 minutes per...

What's the last movie you watched?

Die Hard, of course! I always watch it on Xmas Eve, and that was recent enough I haven't had a chance to watch another movie. But I have watched a couple episodes of The Wheel of Time on Amazon.

I want to relate a true story with you

From a sociological point of view this is fascinating. It seems no matter how far we go back in history the folks think things had declined. There's a well known speech given in the Roman senate about how the youth were corrupt and the Republic was in decline, a speech that could have been...

    It's been a challenging day.

Those days suck! I hope the next few are better!

Been out of touch for a while.

Welcome back! Take it easy and slow, and be careful! As a fellow MT guy we're supposed to be getting walloped by a storm this week, hopefully you have someone to shovel for you.

I'm sorry for all the devastation but grateful you & yours are okay, Katie H!

ISO help/advice on purchasing a boning knife

It's not exactly cheap but I've used a Tojiro DP Gokujo for years and really love it. It takes a great edge, has good edge retention and the shape is perfect for meat cutting.

    $200 Japanese chef knife?

It's kind of a tough one! There are lots of things to consider with a gyuto. First is do you want a Wa-handle or a Westerner style handle? I have both but Wa-type are lighter which I usually prefer. Steel is important but not the biggest factor IMO. Even the lower end knives in that price...

I hope you're back in the saddle again soon! I'm also in Montana and also recovering from surgery (to my dominant shoulder). Best wishes!

    Back issues/backpack

It kind of depends on why you're supposed to wear a backpack. If it's at the behest of your chiropractor then I am just guessing it's to transfer the weight to your hips. If that's the case then something with a good, padded hip belt is what you want. A good pack built in to transfer the load...

Jacques Pepin is a national treasure!

He's a titan! One of the greatest living chefs- probably one of the greatest that's ever lived- and a really charming person as well. Who else rises to the top of their field, then decides to pause to get a master's degree in French literature!?
